Ingredients
- 3/4 cup pineapple juice
- 1/3 cup reduced-sodium soy sauce
- 1/4 cup red wine
- 1/3 packed cup light brown sugar
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 to 1 1/2 teaspoons crushed red pepper flakes
- 2 pounds of beef, pre-cut stir-fry style
- Cooking spray
- Kosher salt
- 1 tablespoon cornstarch
- 1/4 cup chopped fresh cilantro leaves
Directions
- In a medium bowl, whisk together the pineapple juice, soy sauce, wine, brown sugar, sesame oil, garlic, chili powder, and red pepper flakes until the sugar is dissolved. Put the beef in a 1-gallon size, resealable plastic bag. Add the marinade liquid to the beef and seal, removing as much air as possible from the bag. Marinate the beef for 3 hours in the refrigerator.
- Remove the beef from the marinade with tongs and arrange in a single layer on a nonstick pan that has been sprayed with cooking spray. Season the beef with salt and stir-fry over medium heat, turning the beef every few minutes until cooked through. When finished cooking, drain the liquid from the beef stir-fry so you just have the beef.
- Put the marinade into a small saucepan. Whisk in the cornstarch and bring to a boil over medium heat (in order to kill bacteria). Reduce the heat to a low boil and cook until thick, about 5 minutes. Cool for 10 minutes.
- Pour cooked marinade over the beef or pour it into a small bowl and serve on the side. Sprinkle beef with chopped cilantro and serve with noodles or rice. Yum!
